Made in my new red pot, this soup was really delicious. I didn’t include potatoes because of our new semi-paleo endeavor, so I added more carrots, celery, and green beans. I used frozen green beans and precut kale so that saved me some time.
I would recommend that I start the pan on the stove with oil about 10 minutes before cooking so it can appropriately heat. I should have cooked onions longer because they were a bit crunchy but overall I liked the flavor. Maybe I’d like to experiment with adding rotisserie chicken.
